Healthy Summer Grilling
Atlanta, GA - Grilling mirrors a growing
trend in American cuisine toward high flavor/low-fat
cooking. In practice, this means using bold, complex
flavors and textures unencumbered by fat-laden sauces.
Butter and cream are out, light-tasting vegetable and nut
oils are in. With grilled menus, it's easy to add flavor
that doesn't rely on saturated fat. Here are some
suggestions from the Georgia Pecan Commission:
Glazes - A glaze is a coating of a simple vegetable or
fruit-based sauce applied during the last few minutes of
cooking. Usually it lends the food a shiny, finished
appearance. For an easy last-minute glaze, combine equal
parts mustard and jam with a handful of toasted chopped
Georgia pecans and mix well.
Chutneys and Relishes - Introduce lean, new ethnic flavors
to your table by "doctoring up" some of the pre-made
condiments available at your local grocery. For example,
jarred mango chutney mixed with fresh cilantro, lime juice
and toasted pecans can make a great summer topping. Or try
mixing drained, canned, chopped green peppers and red onion
and with toasted Georgia pecans for a super-quick relish.
Salsas - Traditional tomato-based salsas are great for
chicken and meats, but for something different try a fruit
salsa made of seasonal fruit, chopped fresh jalapeno, a
splash of vinegar and crunchy Georgia pecans. Fresh
peaches, pineapple and kiwi are fruits that marry well with
spices and nuts. |
